We’re all about making long-term connections that fuel itinerary inspiration so we set out on a VIP Pizza Tour and James Beard Award-winning experience in the Windy City!

We got the VIP treatment from our "Doughcent" Steve Dolinsky, author and James Beard Award winner, who had encountered one too many "7 Hottest Pizza Places in Town" listicles online, and decided to take it upon himself to redefine the Windy City as "The Pizza City." His research led to two major epiphanies: firstly, Chicago is a "thin" town, as most of the pizzerias in the region specialize in "tavern-style" pizza that's square-cut, thin, and crispy. Secondly, the reason the Windy City is dubbed "Pizza City, USA" is due to its 10 distinctive pizza styles, far surpassing the paltry five found in New York.
We had the privilege of experiencing Steve's passion for pizza on our tour commencing at Robert's Pizza. ”For us, a proper slice of pizza, when folded, cracks but does not break. Striking a perfect balance between “crunch and chew”, we mix, rest, ferment, and rise our dough based on Robert’s journey to perfect a pizza crust.
Our next stop took us to Labriola, where we gained an exclusive behind-the-scenes look at their pizza-crafting process. Culminating at Eataly, our final stop, we managed to savor 7 different pizza styles and rack up our step count!
To cap off our evening, we headed to Broken Shaker at the Freehand Chicago. Their skilled mixologists concoct the perfect blend of elixirs, syrups, and infusions, complemented by fragrant herbs, fresh-pressed juices, and exotic ingredients.
